Ingredients

2 Tbls olive or vegetable oil

2 medium onions, finely chopped

2 cloves fresh minced garlic (1 tsp minced garlic from a jar works great)

3 or 4 large fresh carrots

3 or 4 celery stalks

2 Tbls italian seasoning

1 tsp thyme

pepper to taste

10 tsp chicken flavored instant bouillon granules

1 1/4 cups white long grain converted rice (not instant rice)

9 cups water

1 cup water

Directions

  • Heat oil, choped onion, and garlic in a large soup pot.  Saute until onions are tender and start to brown
  •  Add 9 cups of water
  • Peel & finely chop carrots and celery
  • Add vegetables, herbs, and spices to soup and heat until it just begins to boil
  • Heat remaining cup of water in microwave for about 1 1/2 minutes, stir in bouillon granules, add to soup and return to boil
  • Add rice, cover tightly with lid, reduce heat & simmer for about 25 minutes or until rice and vegetables are tender.
